If you have not been to Franklin’s, then let me tell you what they do.
First they take a whole pig, inject it with a mustard-mustard-vinegar-hot sauce concoction that is a combination of several like apple cider vinegar and their own secret recipe (they won’t tell people) and then they rub the pig all over with salt and pepper. Then they dry the pig out for about nine days in the smoke house with many different types of wood smoke. That is not all, they also put the pig on a rotisserie bathed in their secret sauce. Then you can eat the pig. It is GORGEOUS.
Well, after we have enjoyed that pig, my girlfriend and I headed off to Mad Hatters for some delicious homemade pasta and sausage pizza. I highly recommend that excellent place. If you live in town, or anyone passing through, stop by and talk with one of the owners; they are a hoot! They will tell you stories about several famous people who have eaten there during past Austin Film Festivals.
